ReddRoxx Recipes: Chicken Parmesan
Chicken Parmesan is not only super delicious, but it's super easy too! The marinara sauce can be used for some noodles on the side or you can pair with mashed potatoes and veggies which ever suits you palate the best. Check out the video and recipe below and try it out! Thin sliced chicken breasts Marinara Sauce Shredded Mozzarella Grated Parmesan Cheese (Fresh if possible) 2 beaten eggs Flour Bread crumbs Starch Paprika Seasoned salt Garlic powder Onion powder Ground pepper Italian Seasoning Blend Olive Oil Pre-heat over to 450 degrees. Season meat and set aside. Combine Flour, Starch, bread crumbs and a light blend of seasonings. Lightly season Marinara sauce to taste adding Italian Seasoning blend and bring to a light simmer. Dip chicken breast one at a time in flour, then eggs, then into parmesan cheese, coating entire breast. Heat Olive oil in pan and sear chicken on both sides for about 3-5 minutes on medium heat until golden brown. Spray oven-safe dish with cooking spray, and place browned chicken inside. top with about 1-2 tablespoons of marinara and layer each chicken breast with shredded mozzarella. Bake in the over for about 15-20 minutes until chicken is no longer pink and reaches at least 165 degrees. Serve over pasta with remaining marinara sauce and enjoy!
ReddRoxx Recipes: Greek Chicken Souvlaki with Tzatziki & Homemade Greek Dressing
Greek Souvlaki Salads are most definitely a Buffalo, NY staple and is hands down one of the most flavorful and filling salads you'll ever eat! You can even subtract the pita and easily make it low-carb too. The secret to a great souvlaki salad is in the marinated chicken breast, a great quality Feta cheese, banging dressing, freshly made Tzatziki sauce. There's a lot of moving parts to get this recipe plated but if you take your time it's so worth it! Marinated Chicken Chicken Breast Sliced into Tenders Freshly minced Thyme, Rosemary & Oregano Kosher or Sea Salt Onion Powder Garlic Powder Freshly Squeezed Lemon Black Pepper Paprika Red Wine Vinegar Olive Oil Minced Garlic Plain Greek Yogurt Mix all ingredients, place chicken in zip lock bag or bowl and pour over top, Marinate for minutes to an hour (the longer the better) Greek Dressing: Olive Oil Red Wine Vinegar Freshly minced Thyme, Rosemary & Oregano Minced Garlic Onion Powder Garlic Powder Black Pepper Kosher or Sea salt Dijon Mustard Mix ingredients and set aside. Tzatziki Sauce Cucumber Olive Oil Minced Garlic Plain Greek Yogurt Freshly Squeezed Lemon Dill Paste Kosher or Sea salt Blend ingredients together in blender. Mix with additional plain Greek yogurt, mix in grated unpeeled cucumber. Plate Romain Lettuce, add diced tomatoes, cucumbers, red onion and green peppers. Sprinkle desired amount of fresh feta on top. Plate chicken, pour dressing over your salad and enjoy!

ReddRoxx Recipes: Chicken & Sausage Hoagie
Aside from Pizza, another great staple of Buffalo, NY is our hoagie sandwiches! I've been to the land of the steak hoagie (Philadelphia) and it still hasn't come close to what I've had in my hometown. Aside from steak hoagies, you can get a mean chicken hoagie too, which is actually what I prefer. I was craving a saucy, cheesy chicken & sausage hoagie for dinner so I whipped some up for the family! It's quick and easy and takes about 30 minutes start to finish. Chicken Hoagie Orange Sauce: Mayonnaise Submarine Oil Worcestershire Sauce Frank's Red Hot Sauce Ketchup Barbecue Sauce Paprika Sugar Garlic Powder Onion Powder Black Pepper Dash of Salt Mix together, set aside. Cut Up Chicken Breasts Season to Taste (I Used a Rotisserie seasoning) Beef Sausages (or preference) Onions & Peppers Fry sausages and cut up. Fry Chicken until done, add cut up sausages, peppers and onions. Pour in about 3/4 of Orange Sauce let simmer. Add choice of cheese on top (I used provolone). Once melted remove from heat. Butter and toast sub rolls. Add Mayonnaise then pile the meat and cheese mixture in it. Use spare sauce to add to hoagie over the chicken and serve!

Seafood Boil Shrimp Andouille Sausage Snow Crab Corn Butter potatoes Chicken Stock Minced garlic Garlic Powder Onion Powder Old Bay Crab Boil Paprika Butter Bay leaves Cajun Seasoning Spicey Ramen: Ramen Noodles Baby Bok Choy Chili oil Spicy Chili crisp Butter Soy Sauce Ginger Paste Onion powder Garlic powder Paprika Parsley Chicken Bouillon Water Baked Lobster Tail: Butter Parsley Old Bay Minced garlic Onion powder Cook all uncooked meats/seafood first combine with all seafood boil ingredients. I cooked lobster tail in oven on 425 degrees for about 10-15 minutes. Pan seared fresh baby Bok Choy with olive oil garlic and pepper. Plate add baby Bok Choy and pour extra seafood boil sauce on top if desired!
ReddRoxx Recipes: Pink Pineapple-Teriyaki Wings
Being from Buffalo, NY the home of the Buffalo Wing, chicken wings are embedded in my DNA lol I came across pink pineapples in our local super market and had have them. Combining them with one of my favorite things to eat was a no-brainer! Here's how I made them... CHICKEN: •Cut Wings •Garlic Powder •Onion Powder •Paprika •Parsley •Lawry's Seasoning Season wings and set aside. TERIYAKI SAUCE: •PINK PINEAPPLES •Honey •Soy sauce •Butter •Pepper •Ginger Paste •Corn starch •Rice Wine Vinegar (add tbsp at a time to taste) •Minced Garlic •Brown Sugar Combine all ingredients in pot cook on medium heat. Let boil for about 5 minutes. Blend down pink pineapples and add to sauce. Let boil for another 5 mins, stir consistently. Deep fry wings at 375 degrees or 8-10 minutes or longer for crispy. Remove from grease put in oven safe pan and cover with sauce. BROIL in oven on high for about 5 minutes. Remove and serve! Enjoy
